When life gives you ripe mangoes...

...you should totally make mango salsa with them!!

Yeah, I know mangoes are good on their own, or in a fruit salad, or a smoothie, or whatever...

but they are SOO good when made into salsa! 

So grab some chips (I prefer the organic unsalted corn chips from Trader Joe's, FYI...) and invite them to the fiesta! 
As humans (assuming you ARE in fact a human too), we eat with our eyes first. Feasting your eyes on a big ol' bowl of color is only the first moment of enjoyment. Then, you get to taste this deliciousness. The mango I used was so sweet and ripe, and is complemented perfectly by the contrasting flavors, like the garlic, jalapeño, and cilantro. And if you're into varying textures like I am, you will appreciate how the onion and red pepper add a crisp bite to this salsa.

All in all, if your mouth isn't watering right now, just go ahead and imagine taking a bite of this salsa, the tartness of the lime, and the flavor bomb that explodes in your mouth. How bout now?

OK, now make it for yourself and your loved ones. Or just yourself - no judgement here.

Mango Salsa

2-3 ripe mangoes, diced 
1 red bell pepper, finely chopped
1 small red onion, finely chopped
2-3 cloves garlic, minced
1 jalapeño, minced (toss the seeds or add in for extra heat)
1 handful of cilantro, mostly leaves, chopped
juice from 1 lime
sea salt and pepper, to taste

Combine all ingredients in a large bowl, and mix well. Let the salsa sit for about 10 minutes, and then enjoy! It will keep in the fridge for a few days, but probably will not last that long.
