Strawberry Chia Fruit Roll-Ups ​

5 cups strawberries, green tops removed and sliced in halves or quarters
2 TBSP chia seeds
Juice of 1 lemon
1 cup apple sauce
 
Blend all ingredients, then let the blender sit to “settle” for at least 10 minutes.
On silicone dehydrating sheets, distribute strawberry mixture across 3 sheets, creating squares that are about 9x9”. Make sure the mixture is spread thin and evenly, then dehydrate at 130°F for 6-8 hours. It should be dry and pliable, but not so dry that it cracks when rolled.

To roll-up: I cut each of the 3 squares into 3 lengthwise strips (about 2.5” wide), and rolled them up with a strip of parchment paper. This method made 9 small fruit roll-ups.
