If you know me at all, you know I am passionate about animal rescue, dogs, and especially my favorite dogs for so many reasons, pit bulls! Pit bull type dogs face disproportionately high rates of abuse and death compared to other dogs, due to discrimination and misconceptions, and not to any fault of their own. I have two amazing rescued pit bull mixes (see below), and one of them in particular has quite a miraculous story to tell! I'll save that post for another day, because today I want to share this cozy Pumpkin Spiced Caramel Latte. Right after I made this recipe and enjoyed this gorgeous October morning on the back deck, I headed over to On Target Fitness in Portsmouth NH to attend a special power yoga class led by Elyse from Fairburn It Off. This event was called Poses for Pits, and raised money for the Pit Pals Program which helps provide low-cost spay/neuters for pit bulls. Such an amazing cause! I also got to meet this wonderful little lady, Mila. She is adoptable (hint hint), she recently survived not one, but two hurricanes in Puerto Rico, and just deserves to be spoiled and loved forever. I can personally vouch that she gives great kisses, and is just a total love bug. She is a senior gal, guessed to be between 8-10 years old, but has plenty of youthful energy and runs around like a puppy! One of my favorite things about these dogs is that they maintain their exuberance well into their golden years! She is great with children and other dogs, too! OK, now I can share the Pumpkin Spiced Caramel Latte! A couple days ago I posted the recipe for my Pumpkin Salted Caramel Dip and mentioned that you could blend it in coffee for a delicious treat! Well, that's what I did here and it is SO GOOD. It tastes like it would cost $6 from a coffee shop, but it was actually the easiest thing to make at home, plus it's way healthier, as there is no added sugar and is only sweetened with dates! Pumpkin Spiced Caramel LatteIngredients: 12 oz. (1.5 cups) freshly brewed coffee of choice 2 oz. (1/4 cup) almond milk or other plant-based milk 1 heaping spoonful of Pumpkin Salted Caramel Dip (or more to taste!) Directions: I used a high-speed blender to whip all the ingredients together. I like how frothy and creamy it gets when blended. However, if you don't have a blender that would work for this (please be careful since it is hot), you can heat the ingredients in a small saucepan on the stove and whisk. Transfer to a mug and enjoy! ADOPT! There are so many animals that need homes.
