Peach Baked Oatmeal

Here is a perfect way to use up those delicious seasonal peaches. This baked oatmeal recipe makes a great breakfast, but could also double as a dessert, especially if you added a scoop of vanilla ice cream on top! It's really simple to throw together, simply mix, dump, and bake! This recipe also uses mostly whole ingredients and has no refined sugars. It's great for Sunday brunch or a meal prep for the week. Enjoy this recipe!

Peach Baked Oatmeal
(about 8 servings)

3 cups rolled oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
2 cups almond milk 
1/2 cup maple syrup 
2 flax eggs (2 TBSP ground flax + 6 TBSP warm water, let sit 5 minutes)
4 small/medium peaches, chopped (plus 1 more for topping)
1/4 cup sliced almonds
1 peach, sliced thin

Preheat the oven to 350°F and spray/coat a 8 x 13 casserole dish with oil.
Make the flax egg and let sit for 5 minutes.

In a large bowl, mix together the oats, baking powder, and spices. Stir in the almond milk, maple syrup and flax eggs until completely mixed together. Fold in the peaches. Spread mixture in the prepared casserole dish. Sprinkle with almond slices, and then lay the peach sliced on top. Bake for about 50 minutes, until the edges are browned and center is no longer wet. To serve, cut into slices and top with coconut yogurt, fresh peaches, maple syrup, ice cream, or almond milk.
