It's no secret to most healthy home cooks that tahini dressing is *THE* best and easiest dressing to whip together for salads, bowls, sauces, and beyond!
This happens to be what I do. Sometimes I skip the vinegar, sometimes I skip the maple, but that's the beauty of a simple dressing recipe - you can taste and adjust to reach the consistency and flavor that you like.
Tip: if using a blender, you can just throw a clove of garlic in there whole. if you're sensitive to raw garlic, try roasting it for a few minutes (in the peel - then just pop it out) first. If you're not using a blender, I recommend using a microplane zester to really get that garlic into a pulp. That way you avoid chunks of raw garlic!
Lemon Tahini Dressing
1/2 cup tahini
3 TBSP maple syrup
2 TBSP lemon juice
2 TBSP apple cider vinegar
1 clove garlic, minced
salt & pepper
water, as needed (start with 1/2 cup)
Blend or whisk ingredients together.
