Single-Serving Apple Crisp (gf)

Fall is in the air! The apples are abundant! And this single-serve apple crisp is delicious!

This little treat has every bit of decadence that you love about apple crisp, but without the refined sugar, the scoop of ice cream on top, and the potential to eat way more than one person should. I'm not against the occasional indulgence, but I'm also all for the fact that THIS recipe doesn't have to be occasional - it makes a great breakfast or snack and is full of good-for-you ingredients!


​Single Serving Apple Crisp

1 apple, roughly peeled, cored, and thinly sliced
1 tsp cinnamon
1 tsp tapioca starch (arrowroot powder, cornstarch, or flour would probably work)
1 tsp water

1 TBSP coconut oil 
1.5 TBSP flour (I used almond flour)
2 TBSP rolled oats (gluten-free if necessary)
1 TBSP maple syrup

1/2 TBSP almond butter
2 TBSP coconut yogurt
1 TBSP sliced toasted almonds
Optional: 2 TBSP cashew milk (or any milk)*

Preheat oven to 350°F.
Lightly coat the sides of a ramekin or small baking dish with a bit of coconut oil.  Combine the apple, cinnamon, water, and tapioca starch, and add to the dish.
Then, combine the coconut oil, almond flour, and oats and sprinkle the crumbly mixture on top of the apples. 
​Bake for 30-40 minutes or until the apples are tender.*
Top with almond butter, coconut yogurt, cashew milk, and almonds. Yum!

*To speed up this process, you could gently cook the apples beforehand so that their time in the oven will be shortened.4
*Not necessary, but I like a drizzle of cashew milk over the top because it reminds me of melted ice cream - yum!
