HALLOWEEN: Scarily Healthy Mud Pie & Worms

I'm not a parent, but I am child-like, so I got a huge kick out of this mud pie and worms! I think it will be perfect for kids this Halloween, because not only is it fun, but it's also a healthy snack or dessert, and easy as can be! 

P.S. You will need a high-speed blender and a food processor. You might be able to get by with just a food processor.

Also, even if you don't make the whole mud pie, this chocolate pudding recipe alone is worth saving!! It's SO good, and you would never know that the pudding is made from sweet potatoes!

This is all the ingredients used for the pudding - nothing more! And since the sweet potatoes are already sweet, you hardly need any (if any) added sweetener. The coconut cream makes it SO rich and creamy, and this dark cocoa powder makes all the difference in flavor.

To make the pudding, simple blend the steamed sweet potato flesh with all other ingredients until smooth. So easy!

Totally optional, but I also added 1 TBSP of this red reishi mushroom powder for an extra immune system boost. It's subtle - if it changed the flavor at all, I didn't notice! Chocolate covers it riiiight up :)

This is the walnut date chocolate crumble, which will be sprinkled on top to look like soil/mud. I also added chia seeds and cacao nibs after this photo was taken, which is not required but did add a bit more texture and nutrition.

The final dish: chocolate sweet potato pudding topped with a walnut date crumble and gummy worms. How fun!


​HALLOWEEN: Scarily Healthy Mud Pie & Worms 

About 4 servings
Chocolate Pudding
1.5 cups steamed sweet potato*
1/2 can of coconut milk
2 TBSP dark cocoa powder**
2 TBSP maple syrup
1 tsp vanilla extract
Pinch of sea salt
1 tsp reishi mushroom powder***

Mud Crumble
1 cup walnuts
1 cup dates (should be sticky - soak in water for a few minutes if very dry)
1 TBSP dark cocoa powder
1 TBSP chia seeds***
1 TBSP cacao nibs***

Something Creepy
Gummy worms (FYI they're not vegan if made with gelatin)
Homemade vegan gummy worms (hint: use straws as the mold like this)
Get creative with spiders, fingers, or gravestones, etc. (Pinterest!)

* steamed my 2 small/medium sweet potatoes whole for about 30 minutes, then easily peeled off their skin.
**I used dark cocoa from the store. I have tried this recipe with raw cacao powder but it needed SO much of it. I like this dark one for the potent color and flavor and I found it at a regular supermarket.
***If you don't have reishi/chia/cacao, no worries! I just added them for extra nutrition and texture.

Instructions
Blend all of the pudding ingredients together until completely smooth. Place in medium size dish and refrigerate.

In a food processor, process the ingredients until it begins to look like soil and stick to it self. This might take a couple minutes. Crumble the mixture on top of the pudding and let it set in the fridge for at least a couple of hours, as it will firm up. Keep refrigerated until ready to serve. Add gummy worms and make people squeal!
