Grillable Veggie Burgers

I've been experimenting with making veggie burgers that are grillable. On hot days, with no AC, cooking outside is the only reasonable option!

This is the best one so far, they taste great, hold up well and grill perfectly  Plus, they're super easy to throw together in just a food processor and mixing bowl.

Unless you're intolerant of gluten, don't be scared off by the key ingredient, vital wheat gluten. Buddhist monks have been using this ingredient for centuries... if it's good enough for Buddhist monks, it's good enough for me! ⁣⁣

Grillable Veggie Burgers

1 cup walnuts⁣⁣
1 can kidney beans⁣⁣ (rinsed/drained)
1 T tamari⁣⁣
2 T tomato paste (I used marinara because I was out 😂)⁣⁣
1 T mayo/vegan mayo⁣⁣
1 tsp dijon mustard⁣⁣
1/2 tsp garlic powder⁣⁣
1/2 tsp onion powder⁣⁣
1 tsp salt⁣⁣
A few drops of liquid smoke (~1/8 tsp)⁣⁣
1 cup brown rice or other grain (I used a leftover pilaf that had carrots, onion and herbs in it)⁣⁣
1/2 cup vital wheat gluten⁣⁣
⁣⁣
Grind walnuts to crumbs in a food processor and then transfer to a large bowl. Add beans, tamari, tomato paste, mayo, and mustard to food processor and pulse till beans are partially smashed. Add beans to bowl of walnuts. Add remaining ingredients to bowl and fold and mix for a few minutes. Shape into patties (I made 5). I let them sit in the fridge for a couple hours first before grilling.⁣⁣
