Golden Cauliflower & Kale Salad

I just had a workshop this weekend at Tendercrop Farm. We talked about how to reset your body in a simple way. Rather than over complicating things, or going gung-ho on a juice cleanse, we discussed *gentle* ways to support your body when it's feeling a bit overburdened.

Here are a few ways you can begin to reset your body and energy, anytime, starting today!
  • dance until you break a sweat
  • eat leafy greens
  • start your day with warm lemon water
  • eat light to heavy
  • fast for 12 hrs overnight
  • try deep breathing or meditate
  • eat simple foods

Eat greens, eat simple --> This salad is super simple and incredibly delicious! The tahini dressing is my go-to dressing for roasted veggies, salads, and bowls. I hope you enjoy it!

Golden Cauliflower & Kale Salad

Golden Roasted Cauliflower
1 large head cauliflower (about 2 lbs.)
2 TBSP avocado oil
1 tsp cumin
1/2 tsp turmeric
1/2 tsp black pepper
sprinkle of salt

Massaged Kale Salad
1 bunch kale (about 6 cups), shredded/chopped/torn
drizzle of olive oil
2 TBSP lemon juice or apple cider vinegar
sprinkle of salt

Lemon Tahini Dressing
1/2 cup tahini (sesame seed paste)
1/4 cup lemon juice
2 cloves garlic, minced or grated on microplane
1.5 TBSP maple or honey
salt and pepper to taste
1/2 cup water, or more as needed

Toppings
1/2 small red onion, thinly sliced
1/2 cup sunflower seeds
Optional: raisins or currants, fresh herbs, grated carrot, quinoa, lentils

Roast the cauliflower: Toss ingredients together then spread out on a baking sheet and roast for 25-35 mins or until cauliflower is tender and browned.

Massage the kale: Use your hands to massage the kale, olive oil, lemon/vinegar, and salt for 1-2 minutes to soften.

Make the dressing: In a small bowl or jar, whisk the ingredients together. Add water until desired consistency is reached.

Assemble the salad: Serve with kale as the base, topped with cauliflower, onion and sunflower seeds, then drizzle with the dressing. This recipe works great for meal prep.
