You've had salsa, but have you had cucumber salsa??
4 medium cucumbers, peeled and diced 1/2 cup red onion, diced 1 red bell pepper, seeded and diced 1/2 jalapeño, seeded and minced 4 medium cloves garlic, minced 1/2 cup chopped cilantro leaves Juice from 1 lime 1/4 tsp sea salt, more to taste
Add all ingredients to a large bowl and mix together. Salsa will be best after it sits for a couple hours. Serve with chips, on greens, with avocado, or simply eat plain!
