Cookie Dough (just for eating!)

When I learned that there was a new "edible cookie dough shop" opening at our local mall, I cringed. Then, I did what I usually do and got my butt in the kitchen to make a better version of it.

Essentially, we're eating dessert hummus - which is totally fine with me. Nothing scares me off anymore. Black bean brownies, cauliflower alfredo sauce, making cheese from potatoes and carrots - once you start using ingredients in alternative ways, it becomes a lot less weird when you see chickpeas as the base for cookie dough!

So rather than adding tahini, garlic, and lemon juice, we're adding maple, vanilla, and nuts to make this creamy delicious cookie dough. Then we fold in a few chocolate chips, and everyone has a decently healthy snack that feels like a treat.

No flours, no processed sugars, eggs or dairy. Grab a spoon and dig in!


​Edible Cookie Dough

1 can chickpeas, rinsed and drained
1/4 cup gluten-free oats (could sub almond flour)
1/2 cup pure maple syrup
1/8 tsp baking soda
A generous pinch of sea salt
2 tsp pure vanilla extract
1/4 cup nuts or nut butter of choice
1/3 cup chocolate chips

In a food processor, combine all of the ingredients other than the chocolate chips and process until smooth. Taste and add more maple or an extra pinch of salt as desired. Fold in the chocolate chips and enjoy! If it lasts, this cookie dough will keep in the fridge for several days.

holy cow! I saw the ingredients and jumped up from the couch- this will only take a second, I gotta try it right now! AND IT IS SO GOOD. like SO good. i used cashew butter that i made and had to add flour- didn't quite get a cookie dough consistency but I don't care, I could eat this all day
